Summer is here and it’s the perfect time to barbecue.
Grilling is my favorite way to cook during the summer because it’s quick, easy and there is relatively no clean up!
8 Slices of bacon
4 Slices of smoked turkey
1 Cup of grated cheddar cheese
1/2 Cup of sour cream
1 Tablespoon of hot sauce
2 Tablespoons of diced green onions
Apple coring tool
Two pieces of aluminum foil
2-4oz. Apple smoked wood
Start by washing and drying your potatoes to remove all the dirt. Use a sharp knife to poke a few holes in your potato and then wrap each one in aluminum foil. You’ll want to leave your potatoes on the grill for about twenty minutes but make sure to check on them and flip them every five minutes.
Mix one tablespoon of your favorite hot sauce into your sour cream. Leave your mixture in the fridge until you’re ready to use it.
When your potatoes are done cooking and are cook enough to handle, remove them from the foil and cut off 1/4-inch of the bigger end. This will allow the potato to stand on its own. Use your knife to cut off a zig zag pattern in the top of the potato and then hollow out the insides with an apple coring tool. Wrap each of your potatoes in bacon and use toothpicks to secure the pieces as you go. Use a knife to cut your turkey slices into 1-inch pieces. Fill your potato by alternating layers of cheese and layers of turkey.
Place your potatoes on the grill over indirect heat for about 45 minutes. You’ll see the cheese on top start to overflow, kind of like a volcano!
Grab your sauce from the fridge and top your potatoes with it along with some green onions. Cut your potatoes in half and serve. This is going to be your all time favorite grill meal after just one bite! SHARE the love and pass it on!
